Food Addiction!


Recipe for Rash Attack:
3 Shrimp Dumplings(wheat flour)
2 Bites of Lo Mein
Let it sit for 12 hours
1 thick chunk of milk chocolate with almonds
30 secs add more if required
1 big bite of cheese pizza

So over the pass few days, I have been a scapegoat with my own food experiments. I want to be able to eat a slice of bread with peanut butter once in a while. I crave for milk chocolates! Once you start with sugar, is like the saying Don't start playing with fire. My body is not completely free of yeast hence the tiny amount of sugar brings yeast back to life.
It will make you drive to the nearest gas station at 2 in the am just for a bag of M&M's and it takes no more than 5 mins to finish the bag.
Yes food is an addiction! If you cant say NO to sugar!

So I bought organic sprouted wheat bread (and it says flourless) from Alvarado Bakery.
Whats the difference between sprouted wheat and whole wheat?
Sprouted grain bread has a few advantages over whole wheat bread. Whole wheat bread is made from whole wheat kernels ground into flour, while sprouted grain bread is made from kernels that are allowed to sprout before they're baked into bread. Many sprouted grain breads are made not only from wheat kernels but from a variety of grains and legumes, such as barley, oat, millet and even lentils. Sprouted grains are also easier to digest compared to other whole grains, and the sprouting process increases the bioavailability of certain vitamins and minerals in the bread.

Since I have been tested negative for celiac disease doesn't mean I am wheat tolerant.
Sprouted wheat bread may be better tolerated than bread made with whole or refined wheat flour. Going to do a one slice test in a couple of days and keep you all updated.

China Buffet filled with Section 8 crap!

So yesterday, I decided it was good idea to eat out after returning from NY a week eating out.
Whenever I'm in PA, this place seems the most valued for money buffet place for $12.99. Lunch for $8.99 (same selection)
You witnessed Section 8 crowd committing gluttony at their tables. Eat till you bloat and passed out!!!
I must say the place offers ginormous selection of Fried foods, Pizza, Meat, Hibachi, Sushi, Seafood, Fried chicken, Nuggets, German Salad bar, Soups, help yourself soft serve and desserts.
I used to think since I am paying $12.99, let me stuff myself with at least $15.99 or more worth of food. I don't do that anymore, it destroys my body and makes me feels like heavy weight champion.
So my plate consisted of string beans, broccoli, grilled tilapia, lo mein(wheat noodles) and shrimp. Went back for more shrimp, fresh cut pineapple and honey dew. If I get tempted to eat the other food which I am not supposed to, I just walk around and looked at what others have on their plate and say to myself, good you are eating on my behalf.

We don't stay at that place long enough to eat everything. Anyways, 15 mins after we paid we left for Walmart down the street. All of a sudden I felt dizzy, tightness on my chest, nauseous and I couldn't breathe. I tried to prevent myself from blacking out. I hurried out of Walmart for fresh air. I didn't get what I needed - Basmati Rice :(

That night I went to bed with the dizzy spell and a mild rash around my ankles, neck and my fingers. In the morning my fingers on my right hand swell up and itch like crazy. I quickly popped 25 mg Hydroxyzine (antihistamine) that was prescribed by my dermatologist. I realized I scratched myself pretty good while I was asleep. Smell of blood on my fingers.
It bothers me that I am so sensitive. If this new diet has made me more sensitive to what is in our daily "norm" food.
Not sure, if it was MSG in the food, wheat or shrimp. Earlier that day, I did had a few Traderjoe's shrimp dumplings made from wheat and some Lo Mein from the buffet place(very tiny amount)

Herbs and Spices


Favorites Herbs & Spices I use occassionally:

Turmeric
Sprinkle tumeric aka Curcumin in almost every dish I cooked
Tumeric has lots of health benefits such as:
Detoxifying Liver,
Prevent cancer cells from growing.
Antiseptic and Anti bacterial function.

Paprika
Lots of antioxidants and Vitamin C
Sprinkle whenever I need that sweet& mild spicy taste in my dish.

Cilantro (Frozen from Dorot, available at Traderjoes)
Each cube is equivalent to 1 tablespoon.
I recycled this plastic trays and filled them with fresh chopped organic Cilantro, Parsley & Garlic


Cilantro helps removes Heavy metals esp mercury from our teeth filing and fish consumption.
I have an addiction to Cilantro, so I use about 3 cubes to make Cilantro rice for 2.
I add Cilantro to my scramble eggs, zucchini, eggplant, rice along with tumeric :)
Cilantro taste so good with everything, esp when is all chopped up.

Parsley
Good for kidneys and bad breath :)


Tips:
Blend these herbs separately, or mixed them with garlic and olive oil. Store in the fridge up to 7 days. Since I have the plastic trays from Dorot, I freeze them. Yes you can use them straight from freezer.

Here's a healthy and tasty recipe:
Cilantro Rice (leftover rice is good too)

2 cups Basmati brown rice (cooked and drained)
Do not over cook the rice (Al Dente is perfect)
Olive Oil
1 Chopped Onion
2 or 3 Cubes of frozen cilantro
Turmeric
Salt and Pepper
Sliced organic celery (long and thin)
Sliced organic carrots (long and thin)
Soy Sauce (optional)

In a pan heat oil, add chopped onion, cilantro, sprinkle turmeric, salt and pepper. In about 5 mins, add carrots, in next 5 mins add rice and celery. in low flame stir all these ingredients for about 4 or 5mins and serve.

4 year old burger from McDonalds!


My fav monkey Aaron aka Stacks who is almost 10, shared a video about McDonalds burger that is 4 years old. Watch the link to believe it! the burger looks just like me! Hardly aged :)


Today I used a non stick pan and a plastic spatula to cook. ( Couch surfing in Queens, hence not my kitchen)
Have I gone mad? Last year I replaced my cookware(non stick and Aluminium) with Stainless steel and Corningware Ceramic. Replacing your cookware can be costly, so my options were thrift stores. Anyways here's why you should not use non stick and Aluminium cookware.

Non Stick Pans Health Risk

PFOA

  • Perfluorooctanoic acid, or PFOA, is a chemical used in the non-stick cookware manufacturing process. It is used to make the fluoropolymers that make the coating slippery. PFOA exposure presents several serious health risks, such as developmental problems in animals, and low birth weights in infants. Although PFOA has not been classified as a carcinogen as of 2009, the Environmental Protection Agency (EPA) and eight major cookware manufacturers have agreed to stop using PFOA by 2015. In the meantime, FDA research regarding non-stick pans found that the PFOA evaporates during manufacturing, so there is very little health risk to the consumer, who is more likely to be exposed to PFOA from other sources, like fast-food packaging or carpeting.

Prevention/Solution

  • Fortunately, the health risks of non-stick cookware may be minimized by observing a few basic precautions. To prevent fumes from being released, only use non-stick cookware over low or medium heat, and avoid preheating an empty pan. Keep the kitchen well-ventilated by using the exhaust fan or opening a window. Purchase heavyweight cookware, and maintain the quality of the cookware by using wooden or silicone utensils, and replacing damaged or worn pieces. Extend the life of your cookware by storing it with a protective layer between pans, or hanging it from a pot rack. According to DuPont, makers of Teflon non-stick cookware, the pans can give 3 to 5 years of good service before replacement if cared for properly.

Aluminium Health Risk:
Exposures to aluminum through food can occur when aluminum leaches or otherwise dissolves from the cookware into the food. Leaching is most likely when the foods being cooked or stored are highly basic (like baking soda) or highly acidic (like tomato sauce, lemon juice, oranges, or vinegar). For example, tomato sauce has been shown to contain 3-6 mg aluminum (per 100 g serving) after cooking in aluminum pans, which translates into about one-tenth of the typical daily intake. This leaching of aluminum with acidic foods does not happen with aluminum cookware that is anodized, or electro-chemically processed to seal the aluminum in the cookware.

The Candida Diet

There is a lack thereof education on the general public’s behalf on the topic of candida overgrowth. Most people have it and don’t even realize it…there is a yeast monster growing in most of our guts that keeps our bodies plump and causes fatigue, headaches, brain fog, poor immune systems and tons of digestion problems as well.

Detox does exclude fruits. I cant do straight detox program. Need to ease myself into it, need to chew my food, eventually I will do a juice fast. (99% vegetables and 1% fruit)

There is high sugar content in fruits. Some say fruits have good sugar. But in the yeast perspective, any type of sugar, synthetic or natural helps to keep them alive. When I started my eczema diet, I avoided meat most, wheat and diary. But then I had bad sugar cravings. It wasn't possible for me to totally ignored my sugar cravings coz the more I did the more I wanted sugar. I was easily agitated, constantly imagining the combinations of ice creams and cakes. Opening the fridge, kitchen cabinets every 5 mins searching for" comfort food"

Before my new diet, I was never a soda person, occasionally chocolates and I can skip desserts enitrely. Since I came to America, definitely I consumed more sugar than I did as a child and teenager. Also I arrived NYC at the ripe age where partying was my agenda. Alcohol consumption was a daily thing. Yes yeast and sugar are in a relationship!

In brewing, alcoholic fermentation is the conversion of sugar into carbon dioxide gas (CO2) and ethyl alcohol. This process is carried out by yeast cells using a range of enzymes. This is in fact a complex series of conversions that brings about the conversion of sugar to CO2 and alcohol.

Yeast is also part of fungi family, so I don't eat cheese neither mushrooms.

Anyways if you adventurous, try a Simple Yeast Test!

Might I have a problem with Candida Yeast?

You can try this simple test to find out.

First thing in the morning, before you put ANYTHING in your mouth, fill a clear glass with room temperatureBottled Water.

Work up a bit of saliva, then spit it into the glass of water. Check the water every 15 minutes or so for up to one hour.

If you have a potential problem, you will see strings (like legs) traveling down into the water from the saliva floating on the top, or"cloudy" saliva will sink to the bottom of the glass, or cloudy specks will seem to be suspended in the water.

If there are no strings and the saliva is still floating after at least one hour, you probably have Candida under control, and have nothing to worry about. Congratulations.

Stuffed Peppers with confetti rice


Stuffed Peppers with Confetti Rice

Ingredients
Rice:
You can use the ready to go individual rice bags( takes 10mins to cook and the water drains out when you lift these bags out of the pot)
Shaved Parmesan
Corn
Shredded Carrots
Roasted Tomatoes (Diced)
Handful Sliced Mushroom(Optional)
1 Chopped red onion
Everyday Seasoning from Traderjoes or Adobo
Salt and Pepper
Soy Sauce (optional)
Olive Oil
Butter(optional)

Pre heat oven to 450 temp. Use a sheet of foil over the pan( less mess)
Drizzle 2/3 tablespoon olive oil over 3 peppers with top cut off. Just roll the outer skin with oil that you drizzled. So you have the outside of the peppers coated with oil.
p/s Throw in the tomatoes with the peppers.
Stick it in the oven facing up (like the image) or on the sides including the tops for 5 mins at 400 temp. Re position the peppers whenever :) Turn oven down to 275/300 temp or less, depending on how long you take to cook the rice. I usually leave it on for another 10 mins at 300 then turned it off or leave it on the lowest temp. Leave peppers in oven while making the rice.

Confetti Rice:
Cook packet rice in a pot of water ( 1 packet for each individual)
In a pan, add olive oil and some butter(optional)
Add shredded red onion, after 5 mins add carrots, sprinkle everyday or Adobo seasoning
When your carrots is almost cooked add sliced mushrooms for 4 mins.
Add remaining ingredients including rice in low flame for 2 mins while stirring all ingredients together.

Take the peppers out from oven, stuffed it and leave it in the oven for another 5 to 10 mins.
Add remaining shaved Parmesan on top of the rice.
Set the tops( if they are well roasted( saggy looking) aside.
It seems alot of work, but it doesn't take more than 40mins for everything.

The red peppers may not hold all the rice, so the remaining rice is served outside the stuffed pepper on a plate :). Don't throw out the juice from the roasted peppers, just pour it over the rice!

For those who wants meat, you can add any chopped meat to the rice mix

Allergic reactions to wheat may be caused by eating foods with wheat or even by inhaling flour containing wheat. Allergic reactions to wheat usually begin within minutes or a few hours after eating or inhaling wheat.

The most commonly reported symptoms seen with this kind of allergy include: atopic dermatitis (eczema), urticaria (hives), asthma, allergic rhinitis, anaphylactic shockand digestive symptoms.

Diagnosis may be easy if a person always has the same reaction after eating wheat food, but more often the diagnosis is difficult because wheat is a common food. Diagnosis usually entails a detailed patient evaluation with laboratory tests (RAST, skin prick-testing). Elimination-challenge testing remains the most reliable method of diagnosis.

Avoidance of wheat and wheat-containing foods is the first step in the treatment of wheat allergy. Wheat allergic patients who have sensitivity to gluten (or gliadin) should avoid other gluten containing cereals such as oats, rye and barley. However, because wheat is a common food product, wheat elimination diets can be difficult to maintain. Children on wheat-restricted diets are severely limited in their selection of foods. Alternatives may be found in special health and diet stores and restaurants.

Fish Tacos Versus Tofu Tacos

For those who love fish! Is not for me, I live with 2 others so cooking for me is very pleasurable :)

Prefer soft shell tacos for this, can substitute with white bread ( strongly recommend esp soft white bread)

Time: 45mins
Ingredients:
Tilapia or any white fish
Wedged Limes
Thinly shredded cabbage
Diced tomatoes
Corn(optional)
Not cheddar cheese please, Parmesan, Monterey Jack & many other cheese taste so much better
Cilantro Leaves
Scallions(optional)
Diced Avocado or guacamole( personally guacamole taste much better)
Goya Salsa Verde( is a must, very unique green chili taste)
mayo(optional)

Pan fried your fish, with minced garlic, minced cilantro, finely chopped onion and soy sauce... abit salty is ok, coz you have other ingredients in the mix that will blend together well when you take a bite of the taco!!!

Toast your soft taco, lay ur fish fillets, add the rest of ingredients then top it with mayo and salsa verde! you can also use 2 tacos to hold all ur ingredients if you are very hungry!

This is one of my favorite recipe!

The healthier version:

Ingredients:
Soft White Bread that you want to cuddle to sleep with!!! I know most of you would choose whole wheat. 2 whole wheat slices is equal to one slice of white in terms of sugar. Whole wheat has 2 benefits, lower sugar because is not refined grains. Alot of advertisments talk abt eat more whole grains, be healthier! is NOT TRUE!
Pan Fried Diced Firm Tofu(same way I would cook the fish)
Wedged Lime
Sour cream and lime juice
Finely shredded cabbage
Guacamole (Avocado, tomatoes, olive oil, onion, lime juice salt and pepper in salsa mixer & grind them down!)
If you want to toast your bread, use whole wheat!

So talking about making from fresh ingredients, I can't possibly raise a pig and make soup out of it! So yes I made soup with pork bones today :(
For almost a month now, I fell like I am eating the same dish everyday. I know I can make a vegetarian soup, but I wanted a Chinese soup with Organic goji berries. This soup takes an hr 30mins to cook but 10mins to get all the ingredients ready. You can add anything to your soup. My main ingredient was pork bones, purple cabbage & Organic goji berries from Navitas for $12 16oz not including shipping!

The thought of how the pig was killed lingers even I know they were slaughtered for my gluttony! Very sad!

For those who have not seen it or too afraid to see it. Here's the synopsis of the documentary
It is about how animals including fish not treated equally as humans. They all have the right to live on this earth hence the word earthlings. The hidden camers in all these slaughtered houses/circus and research labs shows how cruel the animals were treated before they were tortured/slaughtered for our consumption, pleasure and scientific reasons. These animals know they were going to die and some of them were abused and separated from the rest before they were shot in the head. Some get their necks slit open for blood to flow out before they were cut into parts. Before they were killed, they lived in cages and they barely have room to move, so these animals go crazy and start chasing after their own tails and some get sick from living conditions esp pigs. The movie shows how the pig has broken legs, huge growths(tumor) on their bodies and they start picking on each other in a pen.
Meanwhile chickens are stored in wired cages. And they have to balance themselves in these cages 24/hrs a day till they are ready to be killed. Most of them cut their feet open from the wired cages. (Very gross) So from these infections, these DEAD & SICK animals are consumed by us. Some of these sick animals are treated with antibotics which is indirectly in our stomachs:) Either way is very sad to see how these animals died.
The documentary also talks about wastage, some animals are killed redundantly because each household throws out so much food that is not consumed. We consumed more meat than we ever had in the past. One pound of meat was for a family of 4 in China for a week. We eat about 2lbs meat easily each meal. So what happens to the wastage? It goes into our lands and oceans. Hence our seafood has high toxic levels. And back into our stomach.
So the theory whatever comes around goes around. I am guilty of it too!!!

Like I said I have such high respect for those who are vegetarian, they are one level above mankind! I am trying so hard to achieve my daily routine and some days is not easy!

So here's the blog that my dear friends Pearl and Li suggested. Daily emails was such an easy flow and private in a sense.Anyways back to me, myself and Flo!
Today I have a slight itch :) on my fingers & palm, but not as bad as usual. There is a Chinese saying that itchy palm(s) means money coming. But my itch is all year round, and I spent more money getting treatments than receiving $$$!

Homemade Corn Salsa
To be honest, I live in NYC for more than 10 years, never tried corn salsa even I see it on the shelf. Apparently, one day Leila bought some from Traderjoes. It was very refreshing and delicious, the sweet and crunchy texture from the corn and the slight sour taste with the rest of the ingredients.

Like I mentioned earlier in my emails, I am avoiding canned food as much as I can because of the BPA lining found in canned goods. So for those who missed out on what is in your canned food, watch this youtube clip. ( It was reported on the news). It is highly toxic in just one can.
So I do my best to make everything fresh.

This recipe is for one fat girl like me:
Time: 45mins includes grilling
Grilled 3 corn husked (with butter, salt and pepper)
or Canned Organic Corn
4 ripe tomatoes (diced) grilled(optional)
1/2 big red onion (diced)
1 lemon (juiced)
3 or 4 tablespoon Olive Oil
1/3 cup chopped basil Leaves
1/4 cup chopped mint leaves
With the salsa maker ($12) I own, I combined tomatoes, red onion, basil leaves, mint lemon juice and grind them together one happy family :)
Sprinkle Everyday Seasoning (generously)
Pink Salt and Pepper to taste
Can add more olive oil.

Is tastier if you leave it in your fridge overnight. Here's my new favorite chips by Late July! The is a promotion for these new chips $5 for 2! Later I will visit the store again and get other flavors :)
